Sooji/Rawa Kesari


This recipe serves 5 small cups of kesari as shown in the pic.

Ingredients:

  • Rava/Sooji - 100 grams
  • Sugar - 150 grams(If you are sweet crazy,add 200 grams)
  • Ghee - 80 grams(For Health conscious people-Just use 30 grams of ghee.While using less ghee,consume on the same day of preparation for best taste)
  • Raisins & cashews - 1 handful each
  • Water - 3 times that of rava(Rava:Water=1:3)
  • color - a pinch
Method:
======
  • Heat a kadai,add 2 tablespoon of ghee and saute sooji till it turns golden brown.
  • Boil water,add the hot water to sooji and keep stirring without forming lumps.
  • Once the sooji is cooked and water is completely absorbed,add sugar ,color and keep stirring.
  • As the sugar melts,the sooji will become watery and starts to thicken again.
  • Do not stop stirring.Once its thickens ,add rest of the ghee (set aside 2 tablespoon) and keep mixing well .
  • At a point,you will be able to see the bottom of the kadai as you pass the spatula through the kesari.You can stop at that point.
  • Fry the cashews and raisins in 2 tablespoon of ghee till golden brown and add on top of the kesari.

Serve hot/Chilled.
