Paneer stuffed Bindi/Ladies finger


Ingredients:
--------------
Tender ladyies finger             -           250 grams
Onion , grated                      -            1
Tomatoes                            -            3
Red chilli powder                 -            1/2 tsp
Garam masala                      -            1/4 tsp
Oil                                       -            1 tbsp
Salt                                      -            to taste
Ginger-garlic paste               -           1/2 tsp
Coriander chopped              -            1 tbsp

To be mixed into a cottage cheese stuffing
-----------------------------------------------------

Grated paneer         - 1 cup
chopped coriander  - 2 tbsp
chopped green chillies - 1/2 tsp
Salt to taste

Method:
-----------

  • Wash,dry and slit the ladies finger lengthwise.Keep aside.
  • Stuff the ladies fingers with the cottage cheese stuffing.

















  • Put the tomatoes in a vesselful of boiling water for 10 min. Peel and chop finely. Keep aside.
  • Heat 2 tsp of oil in a non stick pan, add the ladies fingers and cook until slightly soft.
  • Add the remaining 1 tsp oil in the same pan and fry the onions till golden brown.
  • Add the ginger-garlic paste and the red chilli powder mixed with 1 tbsp of water and fry for a few min.
  • Add the tomatoes, garam masala and salt and cook again for a few min.
  • Sprinkle a little water and add the sauteed ladies finger and cook again for a few min.
Serve hot garnished with coriander.

Carrot Palak curry

Ingredients:
=========
  • Carrot - 5
  • Palak - 5 small bunches
  • onion - 1 big,finely chopped
  • Green chillies - 4,chopped finely
  • tomatoes - 2,chopped
  • ginger garlic paste - 1 tsp
  • Oil - 2 tsp
  • Jeera - 1 tsp
  • turmeric powder - a pinch
  • Salt - to taste
  • Garam masala powder - 2 tsp
  • Coriander powder - 1 tsp
  • Fresh cream - 2 tbsp( optional, you can also add milk)
Method:
======
  • Peel off the skin and grate carrot.
  • Wash the palak well and chop well.
  • Heat oil in a kadai.Add jeera,when it splutters,add onion,ginger garlic paste,green chillies and saute for few seconds.
  • Add tomatoes and saute for few minutes.
  • Add chopped palak and saute for sometime.Add grated carrot,turmeric powder,coriander powder,salt and saute till the raw smell goes off.
  • Sprinkle garam masala powder and add fresh cream.
  • Mix well till it gets blended well with the carrot sabzi.
Serve hot with rotis.

Aloo pudina


This recipe serves two.

Ingredients:
=========
  • Potatoes - 4 medium sized
  • Oil - 1 tbsp
  • Cumin seeds/jeera - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Turmeric powder - a pinch
  • Salt - to taste
  • Coriander powder - 2 tsp
  • Red chilli powder - 1 tsp
  • garam masala powder - 1 tsp
  • lemon - 1/2 a lemon
  • Mint leaves - 2 bunches
Method:
======

  • Wash and pressure cook the potatoes ( Just 2 whistles will do)
  • Peel off the skin and chop into cubes.
  • Add oil in a non - stick kadai and add jeera,mustard seeds.
  • When it splutters add the potato slices along with turmeric powder,red chilli,garam masala and coriander powder.
  • Mix well and cook covered for 5 min till the masala gets mixed well with the slices.
  • Open the lid and cook on a low flame till it gets roasted slightly.

  • Separate the mint leaves and wash well.
  • Add the pudina leaves into the kadai.
  • Keep mixing for 3 to 5 min till the mint leaves turn light black.
  • Switch off the flame and squeeze lemon juice (as per your taste ).
Serve hot with rotis.

Mixed Vegetable manchurian


Ingredients:
=========
  • Vegetables - Baby corn comparatively more than other vegetables .Other veggies are carrot,cauliflower,beans and capsicum.
All the vegetables should be cut lengthwise as shown below.Separate the florets of cauliflower.

  • Spring onions - 8 , chop the greens and bulbs separately
  • onion - 1 medium sized, chopped finely
  • Garlic - 6 to 7 slices, finely chopped
  • coriander leaves - finely chopped
  • Oil(preferably olive oil) - 2 tbsp
  • green chillies/chilli sauce - 4 to 5 / 2 tsp depending on taste

  • pepper powder - 2 tsp
  • Soya sauce - 3 to 4 tsp
  • Tomato sauce - 2 to 3 tsp
  • Corn flour - for making batter
  • salt - to taste
  • sugar - 1/2 tsp
  • Ajinomoto - 1/2 tsp
  • Ginger garlic paste - 1/2 tsp
  • Refined sunflower oil - for deep fry
Method:
======
  • Add 1/4 tsp of salt and 1/4 tsp of ginger garlic paste and 1/2 a cup of corn flour into a bowl.Add water little by little and make a batter without any lumps.The consistency should be slightly watery than dosa batter.
  • Heat oil in a pan.When its hot,dip a handful of baby corn in it and deep fry .Do this process on a medium flame.
  • Do the same for all veggies.Make the corn flour paste sightly thick for other veggies.
  • Add 1 tbsp of olive oil in a kadai and add finely chopped onions and spring onion bulbs.Saute well till it becomes tender.
  • Add capcisum, green chillies,garlic pieces and saute for 3 min.
  • Add soya sauce,tomato sauce,red chilli powder,pepper powder and little salt.
  • Saute well on a medium flame for 5 min.Add all the deep fried veggies.Mix well quickly and switch off the flame.
  • Sprinkle ajinomoto,coriander leaves and greens of spring onion on top.
  • Mix well and serve hot.

This should be served immediately after cooking or else it will become soggy.

Kadai vegetable


Ingredients:
=========
Vegetables of your choice....I used
  • Carrots - 3
  • Beans - 100 grams
  • Potato - 1 big
  • Cauliflower - 1/2
  • Brinjal - 1
  • Peas - 3 handful
  • Corn - 3 handful
You can also use Lima beans,Baby corn or even cubes of fresh paneer.

  • Tomato puree - from 4 tomatoes (Chop the tomatoes and grind it in a mixer).
  • Onion puree - from 1 onion (Peel off the skin ,chop roughly and grind in a mixer with little water)
  • Capsicum - 1, cut lengthwise
  • Pearl onions - 1 handful (5 to 6)
  • Cashews - 4 tsp , broken
  • Ginger-garlic paste - 1 tsp
  • Curry leaves - 2 sprigs
  • Red chilli powder - 2 to 3 tsp
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 2 tsp
  • Jeera powder - 1 tsp
  • Garma masala powder - 2 tsp
  • Curd - 3 tsp
  • Coriander leaves - 2 tsp ,finely chopped (optional)
  • oil - 4 tsp
  • Pepper powder - 1/2 tsp
  • Sugar - 1 tsp
  • Salt - to taste
Method:
======
  • Chop the vegetables into 1 inch long pieces and wash well in running water using a strainer.
  • Add the veggies in a kadai with a pinch of turmeric powder.
  • Sprinkle little water and cook covered till the vegetables become tender.
  • Open the lid in between ,stir the vegetables and sprinkle some water if required.Do not add too much water as the veggies should not be over cooked.
  • Meanwhile heat 1 tsp of oil in a tadka pan and saute the pearl onions with 1 tsp of red chilli powder and pepper powder.
  • Set aside to cool.Grind them along with half of cashews and few curry leaves into a coarse paste.
  • Heat 3 tsp of oil in the kadai,add paneer cubes and fry till they turn light brown.Add the onion puree,ginger garlic paste and saute well till the raw smell goes.
  • Add 2 tsp of red chilli powder,dhania powder,jeera powder,garam masala powder,sugar and saute for 5 min.
  • Add the tomato puree and salt and saute till raw smell goes off.
  • Now add the cooked veggies and remaining cashews and mix well.Let it cook for 5 min on a medium flame.Stir occasionally.
  • Add curd or fresh cream(if available) ,mix well and cook for another 5 min till the oil comes out.
  • Switch off the flame and garnish with coriander leaves.
Serve with hot rotis.

Pyaas & Stuffed Okra Sabzi


This recipe serves two.

Ingredients:
========
  • ladies finger/Okra,tender ones - 150 grams
  • Onions,chopped lenghthwise - 2
  • Oil - 3 teaspoon
  • Mustard seeds - 1 tsp
  • Jeera - 1 tsp
  • ginger-garlic paste - 1/2 teaspoon
  • Salt - to taste
For the stuffing:
===========
  • Besan Flour - 3 tablespoon
  • turmeric powder - 1/2 tsp
  • Asafoetida powder - 1/2 tsp
  • Red chilli powder - 2 tsp
  • Cumin Powder - 1 tsp
  • Dhania powder - 1 tsp
  • GaramMasala powder - 1 tsp
  • White sesame seeds - 1 tsp
  • Oil - 1 tablespoon
Add all the ingredients into a bowl and mix well without lumps.Note that there is NO SALT.


Method:
======
  • Wash ladies finger well and cut off the ends.Slit open in the centre.
  • Stuff enough powder in the slits carefully.
  • Sprinkle the salt over the stuffed ladies finger.
  • Arrange the ladies finger on a Idly/Plate or Steam Plate and Steam for 5 min.If you have a microwave,just keep in it for a min.
  • Heat Oil in a kadai.Add mustard seeds and jeera.When they splutter ,add onions and saute for 10 sec.
  • Add ginger garlic paste and saute till th onions become tender.
  • Add steamed ladies finger and saute well.
  • Allow it to get roasted.
Serve hot with rotis.
