This recipe serves two.
For Puttu:
=======
Puttu powder can be made at home very easily.But since beginners may find slightly difficult to make puttu,you can also try with Instant puttu powder readily available at the market to ease the process.Some of the brands are Double horse ,Eastern puttu powder.
Ingredients:

- Raw rice - 300 grams
- Coconut,shredded - shredded from a medium sized coconut
- Salt - to taste
Method:
======
- Soak raw rice in water for 3 hours.Drain the excess water and spread in a cloth to dry.
- Grind the dried rice to a fine powder in a mixer.
- Heat a kadai and saute the rice flour on a medium flame.As you keep sauting it,you can observe smoke coming out that will go off after sometime.The smoke will again reappear.Stop the process when smoke goes off for the third time.(Do not turn the flour to brown colour.It has to be white only ,yet roasted)
- That makes the puttu powder.
Making Puttu
==========
For making puttu you need a special steamer called "puttukutty" that is cylindrical in shape.This dish is made with lot of coconut.
- Mix salt in water and add the water little by little to the rice flour and mix it.
- You should be careful while mixing the water to the flour.It should not form a dough.
- It should be in a powdered form wet enough for steaming.
- It should be made moist in such a way that when you take a handful of flour,it should hold together and at the same time it should crumble when you touch it.(Refer to the video)
- Now add a fistful full of grated coconut in the puttu maker and then the rice flour till 1/3rd of the vessel.Then add coconut again followed by rice flour.
- Repeat the above steps till you reach the top of the vessel.
Coconut acts a separator.You can form two or three slices in one shot adjusting the layer of coconut.
Close the lid and steam for 5 to 10 min.The steam will be coming out through the holes in the lid.
Remove the lid and push with a sharp lengthy thing from the bottom of the puttukutty onto a plate.The puttu will come out from the top of the vessel.
